I doubt they'd cast an Indian for Iroh. Patel just got the role because Shyamalan popped a boner during Slumdog Millionaire....Wow, way to make an idiot of yourself.
Now that I think of it, the entire Royal Family, I suppose, is going to be of Indian ethnicity. I mean, there's no way Shyamalan can avert such an obvious matter.
