Why couldn't they just go into the cave and summon magical spirit power from the two lovers. Then defeat the Firelord while he is sitting in his palace with a mystic neclear bomb of some sorts? There has to be some kind of spirit that lurks in them there caves. Why couldn't they sense that Katara and Aang love each other, then grant them the power to conquer the Firelord together?
This could have changed the outcome of the entire series if the Firelord was defeated. Azula would have obviously took over since we know now that the Fire Nation has no gender bias. Zuko would still have to defeat Azula to regain his honor, and eventually become the new Firelord in that Final Battle. Then at the very end, we could have seen a wedding between Zuko and Mai, not to mention a holy matrimony in one of the Air Temples (possibly the Jongmu Temple) between Avatar Aang and Katara.
This could have acted as a celebration for what he gave in order to defeat the world from ultimate evil. The same for Zuko's wedding, just that he would have been thanked and remembered for defeating the second most powerful enemy next to Ozai.
Remember, love triumphs over all.

I see the whole Oma/Shu story as more of a romantic legend; I doubt they could even harness spiritual abilities. And, obviously, the creators didn't intend for such an ending. Oh yeah, since when does Katara even have the capability of contending with Ozai? Besides, at the time of The Cave of Two Lovers, Katara didn't have the same sort of affection that Aang had for her.
You're also forgetting that if Zuko hadn't re-joined Azula, Mai and Zuko wouldn't have rekindled their friendship, thus, they wouldn't even be couple (Just.... why? Ugh.).

Katara was starting to get those feelings by that episode, which is why she felt embarrassed when she suggested that the two kissed. Also I was intending on making this an original concept out of the most ridiculous idea that could have never worked in the series as a whole. Either way afterwards, they would have traveled to Omashu and planned an invasion. Before which Aang and Katara would have used their new "gifts" to liberate the city, then plan an invasion as a distraction while Aang sneaks into the capitol city.

But what about your little Zuko-Mai plot? That'd never work, you realize. Mai hadn't even converted over to the good side at that point, and she's just a pawn to Azula. And, for that matter, Zuko was still in the process of finding himself. See where I'm getting?
